50 Recipes: Frikadeller (Danish Meatballs)

You may not know this about me, but I am a Danish gal. (and Irish as well). Growing up, memories of trips to grandma's house are marked by her Danish cooking. For breakfast we had aebleskiver (pancake balls). For dessert we had kringla. At all of my families' weddings, she makes a Kransekake (Danish wedding cake). Served with the aebleskiver in the morning or with potatoes, peas & carrots in the evening, was Frikadeller (Danish meatballs). 

The other day, my mother & and made some of this Frikadella and served it with red potatoes, steamed broccoli & brussel sprouts, and orange slices. Delicious!

Frikadeller:
Ingredients
  • 1.5 pounds of ground hamburger
  • 0.5 pounds of ground pork sausage
  • 3 eggs
  • 1/2 cup of milk
  • 1 tsp nutmeg
  • 1 tsp cloves
  • 1 tsp ginger
  • 1 tsp salt
  • 1 tsp pepper
  • 4 Tbsp flour
  • 1 cup grated onion
  • 1 cup crushed soda crackers
Steps:
  • combine all the ingredients in a bowl.
  • mash, squish, mix together with your hands & fingers
  • roll into balls
  • sear in a frying pan on the stove-top
  • turn the meat ball for all sides get browned (like a dice)
  • transfer to a dutch oven
For the Gravy: (make this up, then add to it if you need more gravy)
Ingredients:
  • 2 Tbsp drippings from meatballs
  • a bit of butter
  • 3 tbsp flour
  • 1 c. Milk
  • 1 Tbsp beef bullion
  • salt & pepper
Steps:
  • mix all together in small bowl
  • boil on stove-top - stirring continuously
  • once thickened, pour on top of meatballs in the dutch oven
  • Bake in the oven for about 45 minutes
(there are about a bajillion ways to makes these, and we made them with true family style & made it up as we went along)
Look how colorful the dinner plate is! So healthy.
